Celebrating the freedom of flavors, the team of chefs at JW Kitchen are curating an elaborate brunch this Independence Day called Taste of Unity at the popular property of this city – JW Marriott Kolkata.

India is the very definition of ‘Unity in Diversity’, with every region offering something different in terms of culture, traditions, music, art and food. Drawing inspiration from the rich diversity of flavors around the country, the Independence Day Brunch will feature the cuisines of all 5 zones of the nation – North, South, East, West & Central, alongside unlimited options of select beverages.

From the North zone, guests can choose from ‘Murgh ke Parche’, ‘Bajra Pudina ki Tikki’, ‘Gatta ka Pulao’, ‘Kashmiri Badam Kofta’ from Kashmir, ‘Butter Chicken’ from Chandigarh, ‘Allahabad ki Tehri’ from Lucknow to name a few. The South station will feature delicacies like ‘Pondicherry Prawn Curry’, ‘Payyoli Chicken Fry’ from Kerala, ‘Veg Shikampuri Kebab’ from Hyderabad, ‘Lemon Rice’ from Andhra Pradesh and a live station will be set up, offering 15 types of dosas and 6 varieties of chutneys to the guests.

‘Goan Chicken Curry’, ‘Malwani Prawn Curry’ from Mumbai, ‘Raw Banana Dal Vada’ from Gujarat will be on offer at the West Station, with a Pav Bhaji live counter offering different options along with various condiments. ‘Poora Hash’ from Assam, ‘Aloo Pyaaz Pakoda’ from Bihar, ‘Aloo Potol Rossa’ from Orissa and ‘Cholar Dal’ from Bengal will be on display at the East station. The Central station will be the go-to station for delicious chaats from Indore with yam, sweet potato and palak being the starcast of this chaat with supporting condiments and vegetables.

Apart from cuisines highlighting different regions of India, there will be a live Biryani counter offering ‘Karnataka Style Egg Biryani’, ‘Goan Style Seafood Pulao’ and ‘Kolkata Style Mutton Biryani’. A brunch is incomplete without the Carving table in place. Giving an Indian touch to the same, on display will be ‘Dum Ki Raan (with Rumali Roti), Moti Pulao, Jhol, Garnish, Laccha, Onion, Kuchumber Salad, Tadka Pyaz.
