JW Marriott Kolkata Presents The Flavors Of Madras

JW Marriott Kolkata has set the standard of hosting diverse food festivals giving all their guests and patrons enough reason to keep coming back to their favorite property. This time, they have curated a nouvelle gastronomical treat for the epicurean in you! JW Kitchen – the all-day dining den, which has won over the hearts and taste buds of Kolkatans, will be hosting a weeklong South Indian festival for the city to relish.

The popular hotel of this city is bringing the best of the South to the East, as they present a weeklong fiesta ‘Taste of Madras’, highlighting the exquisite dishes of the South. The kitchens at JW Kitchen will be wafting with the aromas of extraordinary South Indian delicacies starting 23rd March till 31st March 2018.

Inspired by the cuisine of the erstwhile Madras Residency, which had the influence of the food from the regions of Andhra Pradesh, Karnataka and Tamil Nadu, this enormous spread has been designed and will be brought to life by Chef Chandramani Tarai of Chennai (Specialty Chef, Courtyard by Marriott, Chennai), who specializes in Kongunadu and Chettinad cuisine, which are the 2-major branches of Tamil Nadu cuisine. He is well-known among his guests for his homegrown concoctions of spices such as Sambhar Masala Powder, Varieties of Gun Powders, Chutneys, Pickles, Kari Masala Powder.

The dishes will be laid out as a part of the buffet, alongside a special South Indian live station − making dishes on order. Bringing to Kolkata, his years of expertise in South Indian cuisine, some of the signature dishes to watch out for in this menu are Natu Kozhi Kozhambu (Country Chicken with Onion Tomato Masala, Flavor with South Indian Spice & Gentle Touch of Coconut).’, ‘Manga Meen Korma (King Fish, Tempered with Garam Masala, Coconut, Coriander, Curry Leaf &Chunky Tomato)’, ‘Kalan Pattani Chettinadu (Chettinadu Spice Coated Mushroom)’, ‘ Kothimera Royyalu (Costal Prawn Preparation With Coriander)’, ‘Pappu Charu (Thin Home Style Lentil Preparation With Exotic South Indian Vegetable)’ and ‘Pulihora (Typical South Indian Tamarind Flavor Rice)’ to name a few.
