JW Marriott Introduces An Evolutionary Menu Curated by Super Chef Alexsander Cheng

Chef Alexsander Cheng has introduced a superbly curated new menu which will surely stun you at Vintage Asia. The culinary ingenuity and balanced flavors, giving importance to both vegetarian as well as non-vegetarian fare is a must and highly recommended by Window on Travel!

We were invited to taste a sampling of the newly introduced dishes and after an hour and a half, begrudgingly left the restaurant, marveling at what we had just experienced – a gourmand’s delight!

We began with the Mushroom Bao, Chilli Basil Crispy Potato and the Duck and Litchi Salad. The Bao had black fungus, lotus root and carrot to delicately balance the flavors and was soft and spongy. The Crispy Potatoes were spiced and the corn flour ensured their crispiness. The dry chilies blended in wine for the paste gave the potatoes an extra kick. However, the sweetness of the Duck and Litchi Salad was not my favorite dish.

This was followed with the delicately seasoned Thai Herb Scented Tofu Snow Peas Soup.

We were then served the Wok-Fried Asparagus, Mushroom Truffle Oil followed by the Diced Deep-Fried Chicken Special Superior Sauce in Hot Pot. The latter was a crowd pleaser which I absolutely loved.

The Steam Betki Fillet Chinese Garlic Soy Sauce was steamed with mirin and soya sauce with onions and cooked to perfection. The fish was flakey and perfectly cooked.

We were then served the Sautéed Rock Lobster Sichuan Chili Sauce which my colleague and cordon bleu chef appreciated greatly and then came the pièce de résistance – the Singaporean Chilli Crab which immediately took me back to my last trip to Singapore, eating at a famous restaurant, digging into the crabs and getting our fingers dirty – yet thoroughly enjoying the food. The protein items were accompanied by the Thai Pineapple Cashew nut Fried Rice and Mei Fun and Vegetable in Spicy Oyster Sauce.

To my utter surprise the Blueberry Snow Skin dessert made with coconut mocha skin with a dollop of ice cream with a filling of custard with blueberry jam and litchi was the perfect ending to a delicious meal.

Chef Alexander has worked globally and in a restaurant owned by 3 – star Michelin Chef Jean George Vongerichten serving South East Asian cuisine. So his food really speaks volumes as Kolkata has nothing to compete with his culinary skills in Asian Cuisine.
